Little Rooster Bread Company is a different kind of bread company. We’re a bakery on a farm and we’re named after a rooster we greatly admire. The Little Rooster Bread Company is taking its own path and has something to crow about.

The bread we make here at the Little Rooster Bread Company is way different – it’s fermented. Fermentation is the old way of doing things, when bread making took days, not hours. That’s the way we do it—over days. To ferment means to seethe with excitement. That’s what the dough does—it seethes, unwinding the tight-fisted
strands of flavor locked in the grains, releasing them for your enjoyment and benefit. Interestingly, the process of fermentation also breaks down the phytic acid, making this bread far more digestible. It appears our ancestors, world-wide, knew grains need to be soaked for goodness of flavor and health.

The ingredients in the bread we make here at the Little Rooster Bread Company are selected with an absolute eye for purity, flavor, integrity and wholesomeness. Eggs come from chickens grazing pastures adjacent to the bakery, the honey is raw and local, the grains are whole and organic, herbs are harvested from the farm herb garden. No baking process, no additives, can make up for poor ingredients. We do not compromise—these are the finest available to us and are the building blocks of our bread.

Every village should have its baker. Good bread needs to be baked daily and delivered daily. Anything less requires preservatives or a loaf so heavy it is barely palatable. We use no preservatives, synthetic chemicals, fungal sprays or other additives. Our bread is light and full of flavor that celebrates life, like the little rooster.
